Today...

....oh so eventful!

1. We tried our hand at Jessica Seinfelds brownie recipe (consisting of spinach and carrot puree) and I must say.....they are a HIT! I even just heard some foil rustling around in there........Randy! :) Here's the recipe for anyone interested. Remember though they are geared towards kids so don't go into it expecting Betty Crocker. They are suppose to be healthy and that's what they taste like....but ummmmm warmed up with vanilla ice cream on top sounds oh so good!
  • Nonstick cooking spray
  • 3 oz. semisweet or bittersweet chocolate
  • 1/2 cup carrot puree
  • 1/2 cup spinach puree
  • 1/2 cup firmly packed light or dark brown sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 Tbsp. trans-fat-free soft tub margarine spread
  • 2 tsp. pure vanilla extract
  • 2 large egg whites
  • 3/4 cup oat flour or all-purpose flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
Preheat the oven to 350°. Coat an 8" x 8" baking pan with cooking spray.

Melt the chocolate in a double boiler or over a very low flame.

In a large bowl, combine the melted chocolate, vegetable purees, sugar, cocoa powder, margarine and vanilla and whisk until smooth and creamy, 1 to 2 minutes.

Whisk in egg whites. Stir in the flour, baking powder, and salt with a wooden spoon.

Pour the batter into the pan and bake 35 to 40 minutes. Cool completely in the pan before cutting into 12 bars.

I even had it all planned out.....if curiosity got the best of Rylan my plan was to tell him they were special Halloween brownies since we were putting such colorful Halloween things in them!
2. Probably while I was very wrapped up in making these tasty brownies I heard Hadlee start whining/crying from the other room. I ventured in to see what was wrong (even though the majority of the time I know what's wrong). My hunch was right...I found her laying flat on her back on the floor, Rylan straddling her with a black marker in his hand......trying oh so steadily to color on her face. I couldn't help but die laughing when I saw what she looked like but the funniest part of all was of course the VERY worried look on her face and Rylan's response to just what he was up to.

Mommy: "Rylan...What are markers for?
Rylan: "I was putting make-up on Hadlee Mommy."
Mommy: DYING LAUGHING!

3. I'm in love with the weather! It FINALLY feels wonderful outside!! It's hard to have any worries when it finally feels heavenly out there!

Hmmm...I am anxious to try some of these things. It's funny because at my house I need to trick myself! Alec loves veggies. He does a good job. I on the other hand....
